Candace & Charles Nelson, opened Pizzana in Los Angeles’ Brentwood neighborhood in April, 2017. Inspired by their shared passion for pizza and fascination with the science behind baking, the Nelsons’ first savory venture features handcrafted Neo-Neapolitan pies from Naples-born master pizzaiolo Daniele Uditi. At Pizzana, Uditi’s fresh take on the Naples staple is reimagined for Southern California with his signature “slow dough” that is meticulously prepared with a blend of imported Italian flours, creating a crust that is light and easy-to-digest, yet sturdy enough to pick up with one hand. Candace also brings her pastry expertise to Pizzana’s dessert menu, with Italian-inspired sweets such as Salted Caramel Panna Cotta. Pizzana’s second location is now open in West Hollywood.

Meet the co-founder: An artisan who learned his craft growing up in Naples, Italy, Daniele Uditi incorporates his training from some of the best pizzerias in Campania with his family bakery’s traditional bread recipes. Since his arrival to Los Angeles in 2010, his signature “slow dough” Neo Neapolitan pizzas have garnered a passionate international following of celebrities and pizza lovers.
